Stuffed Sweet Potato Skins with a Chicken Concoction

If I had more time on my hands cooking is the one thing I think I would really enjoy! I love experimenting and trying different things especially food wise! If any of you follow my instagram it is mostly all pictures of food (and the occasional selfie.)

This evening I decided to be creative and attempt a somewhat healthy but reasonably quick meal.
This ended up being Sweet Potatoes stuffed with bacon and cheese with chicken, carrots and parsnips with tinned tomatoes.

I have to say I impressed myself with how everything turned out - I'm sure stuffed potatoes are an easy feat but having never cooked them before I was expecting some sort of kitchen disaster.


For the Stuffed Sweet Potatoes the ingredients you need are:
Sweet Potatoes
Cheese
Bacon
A dash of milk
Any herbs or spices that you might like to add
You cook the sweet potatoes at 200 degrees for 40 minutes till soft, then remove them from the oven and leave to cool.
In the meantime prep any of the ingredients you may be adding to these, grate the cheese and cook the bacon and chop into small pieces.
Once cool half the potatoes and scoop out the inside in to a bowl leaving enough to create a shell.
Add some olive oil into each shell and return to the oven to crisp for ten minutes (or dependent on how crispy you like your potato skins.)
Then using the potato you have scooped out mash in the bowl with a dash of milk till smooth and add some of the grated cheese and bacon pieces leaving a bit for later. Add any herbs or spices you like.
Once crisp take the shells out of the oven and scoop in the mixture till every shell is full.
Then place the leftover grated cheese and bacon pieces on top of each potato.
Place back into the oven for a further ten minutes and you are finished!
Now for the Chicken and Tinned Tomato Concoction the ingredients are: 
Chicken
Tinned Tomatoes
Carrots
Parsnips
Basil
Cumin
Firstly place your chicken in the pan with a bit of oil and keep turning till all the outside has turned slightly brown.
Cut up any carrots or parsnips and place in a separate pot to boil.
Once all of the chicken looks cooked add the tinned tomatoes and mash up to create a sauce, add in any spices. In this case I added basil and cumin to give it a slight but not overpowering kick.
I then added the vegetables I had boiled earlier and left it to simmer.
You can cook this completely on the hob, but I am slightly nuts about making sure everything is cooked so I transferred to a dish and cooked in the oven for 10 to 15 minutes.

Then you have your completed meal! If you haven't tried sweet potato skins it is a must!!
