Basic Banana Bread


Lockdown has given me far more time to bake than I normally would have and it seems like ABSOLUTELY everybody has baked banana bread at least once during this time! Having never made banana bread before I figured I would give it a go due to all the hype and the fact that I already had the ingredients ready at home. The recipe I followed was super simple and I figured I would share it with you:


Ingredients

140g Butter
140g Caster Sugar
2 Large Eggs
2 Very Ripe Bananas
140g Self Raising Flour
1 teaspoon Baking Powder
50g Icing Sugar
100g Chocolate Chips (If you want to add)

Method

1. Preheat the oven to 180C or 160C if you have a fan oven.

2. Mix together the butter and caster sugar until light and creamy.

3. Add in the eggs and part of the flour and mix, onced mixed fold in the remaining flour until mixed together.

4.  Mash the 2 bananas and add them into the mixture along with the tea spoon of baking powder. Optional: add in the chocolate chips, coat them with flour to prevent them sinking.

5. Line your selected baking tin with baking paper. Then pour in the mixture and spread evenly.

6. Bake for approximately 30 to 40 minutes or until a skewer comes out clean.

7. Leave to cool for 10 to 15 minutes then transer onto a wire rack.

8. Once completely cool mix your 50g of icing sugar with 2 or 3 teaspoons of water until runny, then drizzle this onto the top of your banana bread.

Then voila you have your completed banana bread, while my presentation is not brilliant I don't think it is too bad for a first attempt. Overall it was a really simple recipe to make and it tasted delicious! I am fully converted to the banana bread hype after tasting this and I will be re-creating this again and again!
