Lactose Free Pancakes

A few days belated but I had my first attempt at making pancakes yesterday. I am currently trying to maintain a lactose free diet so these pancakes were made with soya milk.

The ingredients used were:

- 300ml Soya Milk
- 2 Eggs
- 100g Plain Flour
- 10ml Sunflower Oil

This was my first time making pancakes from scratch and the recipe was incredibly simple just mix all of the above ingredients together and cook them for 1 minute on each side.

For a first attempt I feel these were a great success they were incredibly tasty with strawberries and some dairy free yogurt. This is a great example of how with one simple change a tasty recipe can be made dairy-free or in this case lactose free for those with allergies or intolerances.

We don't have to miss out on the tasty foods. I am looking forward to trying out some more from scratch milk free recipes.

Restaurant Review: Tattu Manchester

The Restaurant
The restaurant itself has fantastic decor with a flower wall in the downstairs eating area and of course the infamous cherry blossom tree upstairs. As well as this there are many tattoo themed designs dotted around. The lighting was dim giving a relaxed feel and giving the cherry blossom tree a more central and prominent feel.
The staff were all very helpful and service was very quick. Booking in advance was important as the restaurant books up fast and we just about got a spot on a Saturday night in the early afternoon.

Last week as part of an early Christmas celebration me and a few friends visited Jenko's Mongolian Barbecue Restuarant in Ketley.

Having never visited before I had no idea how it worked other than it would be an all you can eat buffet of meats and vegetables.

I am all about the food posts at the moment and while in Manchester the other week I ate so much good food that I felt I should share the places we visited.

My first post was on Brasserie ABode and this current post will be on the Koffee Pot Cafe.

The Koffee Pot was suggested by my friend as a breakfast stop as he had heard many good reviews. So on the Saturday morning we took a wander over in the rain to find this place.

I'm attempting to have more of a dairy free lifestyle again after months of indulging in chocolate and cheese.

My main boost to do this was when I noticed that Tesco had started doing dairy free ready meals. Yes they are now a thing and I could not be happier. Mainly because if your lactose intolerant it is very hard to get ready made food that doesn't contain milk.

I spent the past weekend up in Manchester for a quick mini break before Christmas while up there we dined at the Brasserie Abode part of the Abode hotel chains.
I hadn't heard of this hotel chain or restaurants before but as my friend had booked it I was happy to go with the flow.

A Week in Dublin

Back at the beginning of April I visited Dublin for a week with a friend, this was the first time either of us had ever been to Ireland and we planned to make the most of it.

We booked a sweet little Airbnb room just up from St Stephens park giving us a short walk into the centre every morning through the park. St Stephens park had beautiful arrangements of flowers and I can imagine sitting in there while it's sunny with a good book is a fantasic way to relax.

I'm trying to attempt a dairy free lifestyle again. Now whenever I go shopping I'm always looking for tasty new dairy free finds to spice up my food.

While shopping this week I came across two items that happen to be both dairy free and vegan.

Blogmas #14: Shrewsbury Winter Festival

Last weekend was the second Shrewsbury Winter Festival. I had gone to the one last year and really enjoyed so jumped at the chance to go again this year.

The only catch to this I would say is that you have to purchase a ticket for £6 whereas every other Christmas market or fayre I have been to recently has been free admission. Seems a bit of a steep price purely for entry considering the volumes of people that would visit it.

But nevertheless it was still a good Christmas market with a wide variety of stands, a lot from local  businesses as well so that's always a good thing.

Blogmas #12: Telford Christmas Market

If there's one thing that gets me into the Christmas spirit it's a good Christmas market. Food, gifts, drinks, attractions and more food!
This year in Telford they had their own German market is quite small I'd say 15 stands at the most but quaint non-the-less.
Definitely worth a trip out if you like that sort of thing.

Blogmas #9 Much Wenlock Christmas Fayre

Saturday the 3rd of December was the Much Wenlock Christmas Fayre and lights switch on. They closed off the whole of the town and had 100 stalls for visitors to peruse comprising of gifts, trinkets and of course food.

I'm always looking out for good dairy free finds when I'm out food shopping. While in Tesco the other week I noticed they had really expanded their Free From range so I picked myself up some goodies.

As Nice is so close to the boarder between France and Italy we decided to hope over for the day and visit the Friday Market in Ventimiglia. This was probably the closest tourist attraction we could find that would mean it was a day trip only.

Nice Le Banthai Restaurant

While in Nice we visited a few restaurants and found some firm favourites for food. One of these was Le Banthai in the Old Town.

As you can probably guess the food they had on offer was Thai food. We had walked past this restaurant a couple of times and the aromas wafting out of the door were mouthwatering.

While in Nice we visited the market they have looking for some souvenirs and bargains. The market runs down a strip in between restaurants in the old town and had lots of potential gift ideas and food. Which is always a must!

Restaurant Review: The Indian Lounge, Nice

Last week I was on holiday in Nice, France (there will be a blog post specifically on this shortly) 
While there we ate at a restaurant called the Indian Lounge. Located in the Old Town down one of the sides streets, this bright colourful place caught our eye and the aromatic smell of delicious Indian food drew us in. 
The restaurant was so unique and beautifully decorated that I felt it deserved its own blog post.

So I finally made a dairy free curry from scratch instead of using a sauce in a jar. If I do say so myself it turned out really tasty!

The ingredients I used were:
- Chicken
- 1 Tin of Coconut Milk
- 1 Onion
- 1 Carrot
- Broccoli
- Sweetcorn
- Basil
- Cumin
- Tumeric
- 3 Tablespoons Mild Curry Powder

As I am trying to eat less dairy in my diet I decided to to attempt cooking some dairy free versions of foods that I love that contain milk products. I am a huge fan of pesto especially on pasta so I thought I would see if the dairy free version was just as good! This would be my first attempt at cooking Dairy Free Pesto and at cooking pesto in general.
So its not as blended as it could be (lets blame the blender for that) and at first I thought I had added far too much garlic and that it was going to be a disaster! Thankfully it turned out really well and went nicely with the courgetti (courgettes as spaghetti surprisingly nice!) I had for my tea.
